Rillettes are said to be the first "butter" in the world, as they are meant to be smeared on a hunk of bread. Ours is made from rich, tender hand-chopped pork shoulder that was slow-cooked in pork fat with warm baking spices, ginger and thyme.

Remove plastic, run your knife around the edges of the tub, and flip upside down to release the entire terrine from it's mold.
Let the rillettes sit at room temperature for 15–20 minutes (or gently warm through!) before serving on toasted baguette.
Pair with pickled onions and whole-grain mustard. Enjoy with a glass of sparkling Chenin Blanc or a light bodied Cabernet Franc.
