• Chicken Liver Mousse with Sherry: A rich and spreadable chicken & pork pâté sweetened and topped with a Sherry aspic.
• Hazelnut Pate with Riesling: A rustic, country-style pork pâté studded with smoked pork belly and hazelnuts, and topped with a white wine aspic.
• Green Peppercorn Pate with Chianti: A rustic, country-style pork pâté studded with piquant green peppercorns and topped with a Chianti wine aspic.
