Cotechino is a traditional Italian sausage made with warm baking spices and pork skin. Reigning from the Emilian-Romagna region of Italy, the tradition says the more Cotechino enjoyed at the start of the year, the more wealth and luck you will have in the coming year. This decadent sausage is typically served over tender lentils, and is one of our favorite eating traditions!

Cotechino is traditionally eaten on New Year’s Day atop a bowl of hearty lentils. Cook the lentils with onions, carrots, celery and a bunch of thyme.
To cook the Cotechino, first boil a large pot of water and simmer the sausage until it’s warmed through.
Then peel the casing, slice into coins, and sear on a medium-high pan until golden brown.
Place the coins on top of the lentils with a pinch of crunchy salt, and you are set with one of our favorite meals of the year!
